The Roots

In Greek mythology, Oreads (OHR-ee-ads) are the mountain nymphs born of stone, mist, and wild elevation. To the Greeks, they represented the mysterious power of the heights. Not just guardians of the land, but embodiments of the mountains themselves; fierce, elusive, and untamed. Like the Oreads I believe that cooking should be a mythical experience that brings us closer to the earth.

 

Growing up in the Colorado foothills, I developed an uncontainable love for snowy peaks, wild forests, and fresh flowing water. This inspired my curiosity of the wonders of nature from an early age. I was born into an Italian-American family whose culinary wisdom goes back generations. My family owned the local pizzeria, my first culinary love. I started working there as soon as I could wield a sponge and wipe a table. Ironically, I was diagnosed with celiac disease at 17. Instead of mourning my gluten-filled past, I channeled my passion for nutrition, science, and gardening into something delicious.
 

I went on to study neuropsychology at university and became fascinated by the gut-brain connection. This knowledge allowed me to heal my gut and inspired me to learn about chemistry and healing properties in our backyard. Along the way, I spent time as a lead baker in a gluten-free bakery and built more than a decade of experience in catering and events, learning how to create food that feels both seamless and unforgettable. My brother is a professional athlete, growing up with him helped me hone my sports nutrition recipes and on-the-go meal plans. As well as learn the healing power nutrition can have on injury recovery and athletic longevity. Traveling the world inspired me to look at alternative ingredients and a taste for different cuisines. This wild journey led me to specialize in nutrient-rich gluten-free and allergy-friendly cooking & baking, particularly in high-altitude rural environments. From hut trips to banquets, I am excited to craft celiac-safe dishes that celebrate the harmony between nature, nutrition, and nourishing your soul.
